I wanted to share one of my favorite healthy snacks that just happens to be quite delish too. One of my favorite things about this simple dish (other than the flavor of course) is how colorful it is. My nutritionist tells me that we should be eating the colors of the rainbow with it comes to fruits and veggies and this dish definitely has some beautiful color to it : )
If you love caprese salads as much as I do, then you'll definitely enjoy my vegan (no cheese) caprese appetizer/snack! It's such an easy dish to make but the secret is the fresh and organic ingredients:
- 2 medium sized heirloom tomatoes
- fresh basil
- Organicville Yellow Mustard
- sea salt
- freshly ground pepper
All you have to do is cut the tomatoes into thick slices, then cut each slice in half or quarters depending on the size of the tomatoes. You basically want bite-sized pieces. Neatly arrange them on a dish and then squeeze a little bit of the mustard on each piece. Using your fingers, rip the basil leaves and place a piece on top of the mustard. Finally, sprinkle some sea salt and grind some fresh pepper on top and you've got yourself a fresh and healthy snack to have before dinner! You can even make a large platter and put a bowl of some castelvetrano olives next to it and you have a fancy little appetizer to share at your next party!
If you absolutely want the mozzarella on there, go for it! But I promise you won't even miss it once you've tried this recipe. Not having the dairy on there makes it easier for your body to digest and therefore a healthier option.
